Guilt Free Chocolate Chip Cookie Dough

This Sunday, my sister, Hannah, is hosting a Superbowl party and before now I had no idea what to make.  I wanted it to be at least vegetarian, but also fun.  Sifting through some cooking blogs last night, I came across this beautiful creation...

This gorgeous blob is vegan chocolate chip cookie dough created by Katie on her Chocolate-Covered Katie blog.  I had to try this to see if it really was as good as everyone was saying in blog land.

Here are the simple ingredients derived from Katie's recipe (I omitted the oats and milk in my recipe):

1 can chickpeas rinsed and drained
1/8 tsp salt
1/8 tsp baking soda
2 tsp pure vanilla extract
1/4 cup nut butter of any kind (I used peanut butter, which left it with a slight peanut butter taste.  According to Katie you can substitute oil instead)
Roughly 2/3 cup light brown sugar (I added a little bit more to make it even sweeter)
1/3 cup chocolate chips (I cheated and used milk chocolate chips, which is not vegan)

Blend all ingredients in a food processor until very smooth.  Then mix in chocolate chips.  Serve with graham crackers, apple slices, or eat it with a spoon!

And here is my beautiful blob of guilt-free goodness:

This stuff is so filling!  I had about three scoops of it with graham crackers and was completely full.  Using peanut butter makes it taste like you're eating Reese's Peanut Butter Cup flavored cookie dough.  If you're hesitant about the chickpeas, don't be!  You don't taste them at all.  They simply add the "dough" texture, plus they provide a ton of protein!  Overall, this snack is packed with protein, is gluten free, and has less sugar and fat then a non-vegan cookie dough dip.

    Hope you try it!

      1. Hi Jinna.. I went back at the original recipe and did not find out if you could bake these or not. I'm sure you could. I would just try and see! Chocolate Covered-Katie said they are like the uncooked version of her blondies (recipe here: http://chocolatecoveredkatie.com/2011/05/18/chocolate-chip-blondies-and-theyre-good-for-you/). Hope that helps!
