This gorgeous blob is vegan chocolate chip cookie dough created by Katie on her Chocolate-Covered Katie blog. I had to try this to see if it really was as good as everyone was saying in blog land.
Here are the simple ingredients derived from Katie's recipe (I omitted the oats and milk in my recipe):
1 can chickpeas rinsed and drained
1/8 tsp salt
1/8 tsp baking soda
2 tsp pure vanilla extract
1/4 cup nut butter of any kind (I used peanut butter, which left it with a slight peanut butter taste. According to Katie you can substitute oil instead)
Roughly 2/3 cup light brown sugar (I added a little bit more to make it even sweeter)
1/3 cup chocolate chips (I cheated and used milk chocolate chips, which is not vegan)

This stuff is so filling! I had about three scoops of it with graham crackers and was completely full. Using peanut butter makes it taste like you're eating Reese's Peanut Butter Cup flavored cookie dough. If you're hesitant about the chickpeas, don't be! You don't taste them at all. They simply add the "dough" texture, plus they provide a ton of protein! Overall, this snack is packed with protein, is gluten free, and has less sugar and fat then a non-vegan cookie dough dip.
